Our meal with Jean-Yves was extraordinary. Unusually, we were the only two to book the night we went, so we had a thrilling meal experience prepared just for us. Both genial chefs spent a lot of time talking to us about the food, their countries’ history, and other fascinating topics. The setting exquisite, even more impressive considering it is the chef’s cosy home. How a meal of this quality and complexity was prepared in what is essentially a small domestic kitchen space is difficult to imagine. As for the food, it is some of the best and most unusual I have ever tasted. Time and again, I failed to identify the ingredients I was tasting. Some were new to me – Vietnamese herbs, pandan-infused champagne – and other familiar things – watermelon, sweet potato – had been elevated and transformed beyond recognition (in a good way). My favourite course was the first one: four small vegetable and rice noodle rolls served with umami-splashed endive chasers. The meal ended with a glittery macaron confection that sent us, contented, into the Parisian night.
